Today's recipe is an empanada, popular in South America this stuffed pastry can be fried or baked. We are making baked cheese and green onion and we are going to share amongst the units. Each unit will get a different one of the following cheeses; cheddar, mozzarella, feta, cream cheese, ricotta or white cheddar. I want you to use the turbinado sugar on half of them and a regular egg wash on the remaining. You will be sharing these, remember your food safety. I found the recipe at Laylita's website. Let's try making El Salvadoran Pupusa, this is a stuffed type of bread. Masa or corn flour, combined with salt and water, filled with a mix of beans and cheese. I found the recipe on Bon Appetit, we will be making it as a unit, one group making the dough the other the filling. It takes a little time, organisation and teamwork to get it done.
We have started exploring multicultural recipes with the green onion pancakes and the atayef, its now your turn to do a little research. Thinking of your families' ethnic background (very few of us are from here originally), try and find a baking recipe you would like to try.
Ms. S is a mega mix...Scottish, Irish, English, Welsh and Norwegian (and a tiny bit of a whole bunch of others). There's Irish Soda Bread, Welsh cakes, Lefse, Scones, I could go on. What you will do is find a recipe ( no soda bread or scones, we've all tried those), and then scale it to make 8 portions. We will be making this just like we did with the fancy breads. In my search for stuffed cakes, pancakes, dumplings and all those fun foods, I have stumbled upon Atayef from Simply Lebanese. These delicious little treats sound divine, you will be making the recipe as a unit, one set of partners making filling, one making the batter - both making the pancakes same day. Enjoy!
Time to review the classics. We're going to try a couple of ethnic recipes, some will work, I have a feeling that some will not but lets give it a go. First up is a crowd favourite and Ms. Wei's Mum loves them - scallion pancakes. It is a 2 day lab, very important that the dough rests for at least an hour.
