For the last part of October and the start of November, we are making PIES! We are starting with a simple pie crust that will be used for our apple galette and blueberry pies. Moving from fruit pie, we will make lemon meringue tarts, cream pies and finally a savoury quiche with a cheddar cheese crust.
We are going to test Nancy Silvertons' method vs. traditional methods of making biscuits. In your units- 1 partnership will make biscuits traditionally, that is they will make the dough roll it out and cut it out . The second set of partners will follow the video below and make the biscuits as shown - laminating the dough. Each batch will make 4 biscuits, keep 2 and share 2 with the other set of partners. Enjoy!
How does one make a 'Loaf' ? What technique do you use? It's not a muffin, or scone so fat is different. The technique is more of a cake method, similar to making cookies in that you cream the fat and sugar together. Today, we are making a snickerdoodle loaf.
Don't forget to document! Remember you are showing us your learning journey in baking.
Our fourth recipe is the apple oatmeal muffin, here you will be learning the muffin method, best described as wet into dry blending technique.
To continue on with our quickbread unit, we will be making crepes instead of plain pancakes. I will have everything you need to make the crepe as well butter and cinnamon sugar, however if you would like to have ham and cheese or nutella and bananas you have to bring it for yourselves.
The video below shows how to make them at home using hand mixers, however we are going to use the VITAMIX. The batter will be made within seconds. We will put the milk and eggs in the canister first, then sift the dry ingredients in. Wiz and it's done.
It's the Thanksgiving weekend and here is a little treat to take home and maybe make for your family. Pumpkin is a huge flavour for the fall and we are starting our quickbread section with pumpkin scones. I am going to teach you my method of making scones, or any pastry that needs to be flaky...it's my super power.
