Our last unit before the end of the year, YAY! Cake decorating. It's time to let your artistic self out to play. We will start with learning basic cake decorating skills using the Wilton decorating techniques, using introductory tips. Plain tip, star, leaf. You will learn to ice a cake perfectly smooth and then using your creativity and talent, complete your own decorated cake.
This unit will be about decorating, not baking the cake, you and your partner may use a boxed cake mix to make your cake. They are cheap to buy ($0.98) at No Frills and you can share the mix and make 2 smaller cakes. Make sure you bring your mix to next class. French Vanilla is the easiest to work with, White cake...is an angel food too finicky, and Chocolate is difficult to ice. You can find the Wilton Buttercream recipe here

I was prepping for our cake decorating lab and came across Wiltons marshmallow flower tutorial, it reminded me how much I hate marshmallows. Except these, they are divine. You can buy 10, beautifully packaged at various gourmet grocery stores around the city, but they are not cheap. I have the Butter cookbook in class for our pleasure, it's spectacularly photographed, the recipes are divine. Today we are going to make marshmallows from scratch! cool! I found the recipe here at Eat Travel Write(I was pressed for time and wasn't able to type it out). Fortuitously I found modifications for the marshmallows at Cake Spy as well as another copy of the recipe.
Today's lesson plan.... print out the recipe, check out the modifications and decide if you wish to alter the recipe... On our path to the final exam I am teaching and giving you the option to modify recipes. Today we are taking the basic Light and Tender Scone recipe and changing the add in's. Some of the options I have are; coconut, rhubarb, strawberries, cranberries, apple, cinnamon, ginger, green onions, cheese, garlic and roasted peppers seasoning. Think about how you are going to finish the scone. Obviously you won't put sugar or cinnamon on top of cheese and garlic scones. Print out the recipe if you don't have it with you, be prepared to alter. As with the cookies, you will be handing in one sample for marking. By the way, the staff LOVES when they have to mark these yummy products. Not to cause anyone a panic attack, however there are 12 class days left until June 18th. Warning Baking final exam starts June 8 and your cookbooks / blog are also due on June 8.
