Finishing off our bread unit, we're going to make some flat breads. Flat breads are typically unleavened- meaning they have not risen, nor do they have any yeast in them. We will start with Ms. Wei and Mrs. Wei's (mother) favourite.... green onion or scallion pancakes from Taiwan. I'm just going to say, this is my version of an Asian staple. Next we are then moving to roti canai from Malaysia. This dish is typically a little sweeter and softer, but still crispy...similar to the green onion pancake. Finally we will finish the week making home made tortillas from Mexico, or latin countries.

The Cornish Pasty has a long history, so I have provided a link for you to read more about it. I am going to retell the tale of my great grandmother Minnie and my second cousin Ellen and the time they ran away from home. One summer when I was visiting Ellen in Los Angeles she told me about the time she was 16 and Minnie was definitely a senior. They were both a little frustrated with her uptight (but loving) parents. The two of them hatched a plan to run away to San Francisco in a Morris Minor with red leather seats and no AC- Road Trip. Ellen is a very logical woman, and I think she was at 16 as well. Minnie and Ellen made lists of things they would need, food being a main item. This happened in the late 50's and I'm pretty sure drive thru wasn't too common. Something that would be filling, delicious and travel well, after all they were driving from New Westminster to San Francisco. They decided on Cornish Pasties. Prior to their adventure the two of them spent the afternoon making various pasties and wrapping them in tea towels for the trip. Now the interesting part of this story -they arrived in San Francisco and the freeway system was quite confusing....they missed the off ramp for the city, what to do? Heck, this was an adventure, no time, no one expecting them anywhere (because they ran away) so my Great Grandmother Minnie and my cousin Ellen skipped San Francisco extended their trip. Next stop Reno Nevada! I have no idea if either of them were chastised for their shenanigans but it does make for a fun story while making a semi-traditional dish. Remember the green onion pancake? We are heading back to Malaysia this time to make delectable Roti, these are a savoury but sweet treat. The dough has sugar, flour, water and a little oil. We will be cooking them in the electric frypans (please remember to clean them thoroughly!) and I will make a peanut satay sauce to go with them. For this lab, you need to bring in a container to take them home. NO BAGS!
Our last two pie recipes in class will be a cream pie, the main recipe is for chocolate cream pie, however there are options for butterscotch or coconut cream pie. Pies can also be savoury, one of the most popular savoury pies would be quiche. I will have cheese for you, but if you wish to add to the quiche you must bring in the extra ingredients. I find great additions are spinach, peppers and goat cheese. A classic combination is ham and cheese. Enjoy.
Today's recipe is an empanada, popular in South America this stuffed pastry can be fried or baked. We are making baked cheese and green onion and we are going to share amongst the units. Each unit will get a different one of the following cheeses; cheddar, mozzarella, feta, cream cheese, ricotta or white cheddar. I want you to use the turbinado sugar on half of them and a regular egg wash on the remaining. You will be sharing these, remember your food safety. I found the recipe at Laylita's website.
