We've learned how to make cookies using the . creaming method, now we are learning about the biscuit method. The idea behind this method is to use cold ingredients, work quickly and create flaky layers. Scones and biscuits will have a tender crumb with moist layers, not a bready texture. I personally find the best technique to achieve this is to grate frozen fat into the flour mixture using a box grater, much easier than using a pastry blender. The first class you will make 1/2 the recipe with no instruction from me, READ the recipe...next I will do a demo and show you my method. Finally we will practice by making Pumpkin scones, biscuits and pie dough.

Term 1 is worth 10 marks, Term 2 is 50 marks and your year end Term 3 is 100 marks!
