What is Hoddeok? Apparently the most magnificent street pancake created for man and woman alike. A fluffy yeasty pancake filled with caramelized cinnamon sugar and nuts. I think you could probably fill with almost anything---my brain is thinking vegetables and cheeses or meat if you're so inclined. Oh gosh! fruit...like a hand tart. The possibilities are endless.
Lefse is a delight I discovered a few years ago while researching breads of the world. Its a cross between a tortilla and a crepe. It can be savoury or sweet. While working at Byrne Creek, my students made it and we served it with maple syrup...it was a cross between French toast, pancakes and crepes. I've gotten a little better at making it and it is now thinner and chewier.
I've included links to the recipe, which I want you to ....print off and cut in half again. Just because these two make me smile, I've included Lefse with Rollie and Olga. Enjoy.
Zig Zagging across the globe, we're headed to Sweden next and Swedish pastry. How do I find these recipes? Well it's called an addiction.....to Pinterest. I typed in flaky pastry and different photos popped up, this one is a combination recipe -multiple techniques rolled into one glorious item. I have had this item before, part flaky pie crust topped with a cream puff and sweet almond frosting. Told you glorious! in the morning with a cup of coffee (or decaf) and a piece of fruit, you're set for the day.
