Happy Thursday, it's time for a challenge. I have found and made two delicious blueberry scone recipes -now its your turn. A standard classic recipe as well as an advanced recipe. I know some of you are very capable and would enjoy the challenge of the America's Test Kitchen recipe, others want to just bake and eat. I would love to see some of you challenge yourselves and go for the tough one. Whatever you decide. Enjoy!
When I was a kid in the olden days -aka- the dark days before the internet and smart phones, a treat I rarely got was Poptarts. Thinking about that now, my mother was right not to give them to me for breakfast because they truly are more of a dessert. Have you had a poptart? They are not very good, kinda like cardboard with jam filling. they do hit the spot when you're in need of a sugar hit. This recipe however is divine! It's been modified from Deb at www.smittenkitchen.com. I will have jam or cinnamon sugar available, I recommend Nutella and bananas, but will not be supplying any. You may however bring some in for your group.
Ok everyone, you are filling in this self evaluation and we will go over it together. Please circle the work habit you think applies best to you and your time here in the class. When filling in your comments use more than one word, complete your sentences. Due on Monday October 16, 2017
The Cornish Pasty has a long history, so I have provided a link for you to read more about it. I am going to retell the tale of my great grandmother Minnie and my second cousin Ellen and the time they ran away from home.
One summer when I was visiting Ellen in Los Angeles she told me about the time she was 16 and Minnie was definitely a senior. They were both a little frustrated with her uptight (but loving) parents. The two of them hatched a plan to run away to San Francisco in a Morris Minor with red leather seats and no AC- Road Trip. Ellen is a very logical woman, and I think she was at 16 as well. Minnie and Ellen made lists of things they would need, food being a main item. This happened in the late 50's and I'm pretty sure drive thru wasn't too common. Something that would be filling, delicious and travel well, after all they were driving from New Westminster to San Francisco. They decided on Cornish Pasties. Prior to their adventure the two of them spent the afternoon making various pasties and wrapping them in tea towels for the trip. Now the interesting part of this story -they arrived in San Francisco and the freeway system was quite confusing....they missed the off ramp for the city, what to do? Heck, this was an adventure, no time, no one expecting them anywhere (because they ran away) so my Great Grandmother Minnie and my cousin Ellen skipped San Francisco extended their trip. Next stop Reno Nevada! I have no idea if either of them were chastised for their shenanigans but it does make for a fun story while making a semi-traditional dish. (They were gone for about a week, and said parents were furious). Click here for our veggie recipe.
It's Thanksgiving weekend! Here's a little treat that's a pumpkin pie and super easy. Lisa and I made this little video in class on Wednesday and tested the recipe. Truthfully, there is no recipe. The ingredients are: 1 sheet of puff pastry, 125mL pumpkin, 60mL icing sugar, 2mL cinnamon, 5 mL brown sugar and an egg (for 1/2 the class). Watch the video, take notes...watch it again and enjoy!
This week we will be learning the biscuit method, the technique is also used when making pastry for pies. The key is to keep the fat and most ingredients ice COLD! Watch the Southern Living video for technique, and find the recipe here.
